Mini Cheesecakes with Wine Gelées

By KATE ZUCKERMAN @foodandwine  @ChesapeakeBayWineTrail @VaultFieldVineyards
Kate Zuckerman, a pastry chef at Manhattan’s Chanterelle and author of the new book, The #Sweet Life, thinks most c#heesecakes are too heavy and sweet. Her recipe uses goat cheese to lighten the texture and tangy crème fraîche to cut the sweetness. Here, she tops mini #cheesecakes with #wine gelées—a new kind of wine-and-cheese-pairing. Red Wine and Cocoa Frozen Yogurt

I’m learning that frozen yogurt can, in fact, be just as good as ice cream… and maybe better.

Yeah, I said it.

See, I learned something today. I learned that if you use two cups of plain Greek yogurt as opposed to one cup of plain Greek yogurt and one cup of milk, you end up with a smooth consistency that is comparable to frozen custard. And if you’ve ever had frozen custard, you already know that it’s the #best damn frozen #treat in the world–hands down. Get the Recipe

I feel like there’s no middle ground when it comes to sandwiches – you either have a really good sandwich that is full of #flavorful ingredients that complement each other in just the right way or you have a really disappointing sandwich that fails to #satisfy and leaves you feeling very underwhelmed. #Sandwiches can make or break a day. This sandwich definitely falls into the former category – a really good sandwich. While I love the traditional Rueben layered with corned beef or pastrami, swiss, sauerkraut, and 1000 island dressing in between two slices of #grilled rye bread, this tempeh version is arguably just as #delicious, if not more. If you’re a #MeatLover, you just need to keep an open mind 😉

As mentioned above, all of these components can be made ahead of time if you’re short on time or want to prep lunches for the week. I wouldn’t recommend making the #sandwiches beforehand as they’ll get soggy and soggy sandwiches are a no-go in my book. Also, if you have a panini grill, by all means, use it! We don’t have one, so we simply ‘#grill’ our Reuben’s in a frying pan. Get the Recipe!

Blackberry Cabernet Cupcakes

Blackberry Cabernet Cupcakes

Blackberry Cabernet Cupcakes ~ When sugar and wine meet they birth cupcakes. At least they did this past weekend.

I really love making boozy anything and since I had leftover wine and a surplus of blackberries I did a quick kitchen scan to see what my I could make with those two things. Naturally, no matter what I looked at cupcakes kept screaming at me I’m glad they did because these cupcakes are simple and delicious. It’s also a great way to use up leftover wine from a party. Don’t worry if you don’t have blackberries, depending on the wine, you can try this recipe with cherries, raspberries, blueberries, and even some plums. But taste as you go, when you’re making your berry or fruit mixture. I’m definitely no wine expert. My expertise extends as far as the recommendation from the given wine expert in the room.
